insanity breakfast

recently, tyler & i, have started the insanity workout.  last night was our 2nd day, and this morning i feel like i was in a car wreck.  my legs are so sore!  not only does this workout provide insane workouts, but also a really good nutrition plan.

yesterday was my first official calorie counting day.  in the nutrition guide, is a formula to calculate how many calories you'll need to provide your body with enough fuel to keep going through the next couple of months.  i am supposed to consume 1750 calories a day!  i know!  it seems like a lot to me too.  but these workouts are intense, and i don't want my body to think it needs to hold on to the extra fluff.

this morning i'm having my protein omelet with a slice of whole grain toast & strawberry all-fruit preserves.  and my coffee, of course.  it is...was...so good!  not that i'm surprised.

the omelet consists of:

1 whole egg
3 egg whites
2 oz. deli-style turkey breast, sliced
1/2 cup sliced mushrooms and onions

sauté the mushrooms and onions in a little olive oil.  while those are goin', pre-heat your pan for the omelet.  (med heat works for me)  scramble the eggs and egg whites and place in your pre-heated pan.  then add the sauteed mushrooms and onions and add the turkey.  fold one side of you omelet over the other.  remove pan from heat and cover.  let the covered pan sit for ten minutes.

while your omelet is cooking in the covered pan, you can toast your bread and add the preserves of your choice.  1 tablespoon of preserves to be exact.  then when your timer beeps, voila!  you have a healthy, fluffy omelet ready to go to the party in your tummy!  all of this for a whopping 300 calories...minus the coffee.  the coffee is about 2 calories w/ truvia sweetener for 0 cals and 1 tblsp creamer is 40 cals.

  1. Luke and I have been thinking about doing something like this, but it's hard since we're in two different places. What do you think of it? Is it difficult to make yourself do the videos?

  2. i'm basically the one preparing the meals and calorie counting...for both of us. it's not hard doing the videos, but the videos are hard. my usual treadmill or tracy anderson vid's never make me this sore! i guess it's working. ;) you guys should try it!
