1 whole egg
2 egg whites
1/4 c feta cheese
1 c baby spinach
1 slice of whole wheat bread or whole-grain english muffin
in a non-stick skillet coated with cooking spray, add your egg and egg whites (already scrambled together). then add the feta cheese and spinach. when the eggs are firm, fold one side over the other with omelet ingredients inside. (i've noticed that if you add a lot of spinach, it's hard to keep it all in) once folded, cover your pan and set the timer for 10 minutes. serve with 1 slice of whole wheat bread or english muffin. i put a little smart balance spread on my whole wheat toast.
